Excellent: only unless you're using abnormally large zucchini, I'd recommend getting 4. I also followed the recommendation of some other reviewer from another recipe and salted and baked the zucchini slices for a fiddling over 10 minutes in the oven at 350 degrees. I compensated by reducing the salt in the cheese mixture, only perhaps I didn't need to. I substituted frozen spinach for the parsley in the cheese and egg mixure. Turned out great. I was afraid of it drying out, and so I added some pasta sauce on the very top before baking -- virtually i-2 cups to get a nice blanket.

This is and so delicious! I actually used eggplant instead of the zucchini! It turned out amazing.

I made this in a 10X15 glass casserole dish, I never seem to have enough room in a 9X13 for lasagnas. I used a Julienne vegetable slicer to slice my zucchinis, then they were quite thin, and I didn't practise whatsoever of that pre-cooking or salting them. four medium zucchinis made iii nice layers with no problems, and I kept the seed slices in there also. I had some homemade marinara sauce, well-nigh 3 cups, and so I used that with the diced tomatoes, and only a small-scale can of paste, since I had a larger casserole dish. The instructions for layering are well written, then many lasagnas are confusing when it comes to the layers. Someone complained about the prep, simply I did all that in the time the meat and sauce was simmering, a really good lasagna is worth the actress time it takes to prep. Nosotros really loved it and you don't miss the noodles at all...will make this one again.

I made this exactly similar the recipe called for the showtime fourth dimension. It was great! The second fourth dimension, left out the sugar and red pepper flakes and I added fresh spinach. Information technology was even better. The 3rd time, I added fresh spinach and sour cream (16 oz divided in one/ii)with 1/two on superlative of each layer of spinach and spread over spinach. The layers went similar this: zucchini, ricotta, mozzarella, meat sauce, spinach, sour cream. Repeat. Let me say that the dear husband and the beautiful petty munchkins wanted more than and there was none--I mean none-left for the week--which is what I was hoping for lunch leftovers. I am thinking a echo for side by side week! Yum!!!!!!!!!!!!!

This was awesome! Brand sure to salt the zuchinni slices to get as much liquid out equally possible before building the dish! Delicious! I've already shared the recipe with several people.

My family unit loves it!! Better than the regular lasagna noodle. I'll be doing this recipe once more and once again.
08/08/2014
This is the best lasagne I've always had. Made exactly to the recipe. Everyone loved it, including my non-veggie eating teenaged boy. Volition make a few to vac seal and freeze for winter!

Great recipe! My noodle loving family didn't miss noodles. I used all Italian sausage, no beefiness. I also followed another reviewers suggestion and used spinach instead of parsley in the cheese, egg mixture.

To be honest this recipe is very delicious merely extremely fourth dimension consuming! Also unless you lot have institute extremely large zucchini to use y'all will demand WAY more then 3!! I would also recommend using a mandolin to cut the zucchini and so y'all will get even pieces. I used a peering pocketknife equally suggested and information technology was tedious and frustrating. I am not certain in what earth would it take 30 mins prep time since it is all home made and you have to chop and cut everything including the spices. The sauce alone takes 30 mins of cooking time. Once was all said and done information technology was very good. If I were to ever make information technology again I would make those changes.

This was fantabulous! I used a larger pan considering I similar to take plenty of room without the lasagna bubbling over. I also used almost iv med. zucchini just sliced as sparse as I could. Didn't table salt or precook them. Used 1lb each of Italian sausage and hamburger and threw in some mushrooms cause I love them! Besides that, I did the recipe exactly as written. Loved it! Adjacent time I might use a bigger container of ricotta since I used a bigger pan. And I did cover with foil for about the last 20 min of baking, only took that off again when adding the last layer of foil. This recipe is so worth the time and effort. Thanks Jeff B!

All-time flavor always! The seasonings in this dish are superb, my hubby and I both loves the flavour. I am in the process of making number 6 and vii to put in the freezer, I already thawed one to see how it re-baked and information technology was as skilful as fresh. I fabricated a couple of modifications, no beef-just sausage and fresh Asiago rather than ricotta.

If y'all take the time and patience it is well worth Information technology took my wife and I 45min prep time 90min broil fourth dimension 15min cool down information technology is so adept we well be doing it over again.
08/xix/2014
I substituted ground turkey for the beef and one-half of the zucchini for eggplant and decreased the amount of table salt a bit. Yet was a little salty, but loved the flavor of the meat sauce. Skillful recipe and will definitely make it again.
04/sixteen/2014
I loved it and will be making it again. I made it vegetarian and left out the meat but added mushrooms. Very good, i didn't fifty-fifty miss the pasta.
06/ten/2013
This was groovy. Will brand a lot going forrard. I do not eat pasta and so this was a perfect solution!
08/fourteen/2018
I brand this at a retreat center I work at. I didn't care for information technology being so watery and after reading all the reviewers have the same trouble, I came up with a solution! I pare the zucchini so and so spiral cut it. Put a rack in a blistering pan and place the spirals on the rack, trying not to overlap. I put the pan in a 250 caste oven for thirty-45 minutes to draw out the moisture witout cooking the zucchini. Worked groovy and texture wise you could hardly notice the deviation from a pasta lasagna. The 14 ladies raved it!
08/26/2014
Sooo delish!! Kids canonical besides!! I take so many zucchini in my garden, I don't know what to exercise with them! This was the perfect recipe! Loved it, and will definitely make it again! ??
04/25/2016
My husband and guests from WV raved nearly this recipe. Information technology has at present become our favorite pasta-less lasagne. I used all mild Italian sausage rather than one-half ground beef. I too cut the red pepper flakes to 1 teaspoon rather than the ane Tablespoon in the original recipe. It turned out plenty spicy. This lasagne actually held together perfectly for cutting and serving! Many thanks!
01/02/2016
This was astonishing! Everyone loved it and raved. Anybody. Not a morsel was left! I didn't salt the zucchini, merely used my mandoline slicer and put them directly into lasagna. No one missed the noodles. Was perfect! I really didn't experience information technology was time consuming equally others did. I used ground venison and breakfast sausage from a local subcontract, and added fresh mushrooms and fresh spinach in the layers. Didn't use the saccharide considering information technology seemed superfluous. Can't rave enough! Will be making this again and again and over again. If yous are because making this recipe, do it at present!

This was nifty. Followed the recipe as much every bit a could with the ingredients we had, such as two yellow squash and one zucchini. The yellow squash were skilful for the bottom layer considering they were thicker. Used calorie-free ricotta but the mixture with the egg and Romano cheese and fresh parsley was divine. Also used jarred Healthy Delight sauce but added the recipe's garlic, pepper flakes, and fresh basil and oregano. It was wonderful. I was just amazed that everyone loved it. Thanks for this.
10/03/2015
This was the best lasagna I've ever made. A little fourth dimension consuming merely well worth information technology. Next time I might slice them in rounds to save some time. I used dry herbs(except for parsley) and cut the amounts in half. I used less than a teaspoon of cherry-red pepper flakes and, for me, that was plenty spice. My hubby loved it. Since I don't eat wheat, it was the perfect dish. The rest was frozen to enjoy this dish again and over again. Give thanks yous for sharing.
08/17/2015
We use a pound of basis turkey with our bootleg sausage seasoning instead of the beef and Italian sausage. This is our go-to "special occasion" dish. If there's a reason to celebrate, chances are nosotros'll be serving this lasagna. It'due south succulent!
05/08/2013
Made this a few times now with eggplant and without. A huge hitting with the family.
07/17/2015
I used all Italian sausage instead of 1/2 beef. I loved this dish and couldn't go enough of it! Just made it terminal Saturday for the get-go fourth dimension and will be making it over again this Sat/Sunday.
05/05/2017
Made this for a dinner political party. Anybody loved it. I could just find pocket-sized zuchinnis and then I used 4.
11/17/2018
Followed the recipe as is and it was admittedly fantastic. Don't come across any need to buy lasagna noodles any more. This is a definite keeper and I will make once again for sure!
05/19/2018
I've made it a few times now, great season and texture.
04/25/2017
I added noodles

I wasn't a fan of the chocolate-brown carbohydrate in the meat and the recommended tablespoon of blood-red pepper flakes was WAY too hot-- it covered upward all of the other flavors. And that's coming from someone who loves spicy curry, hot wings, siracha sauce, etc.
04/27/2020
Phenomenal recipe! I used ingredients every bit instructed...had the thick shavings of parmesan. Awesome rich flavors. And I used Bartoli marinara with chunky veggies. I didn't eliminate the seeds from the zuccini, as mine were smaller and had small seeds. The primal to skillful cut and soft zuccini when eating is slicing them very thin. My strips weren't long, equally information technology was difficult to cut, simply curt pieces actually made information technology easier to serve. I'll use this again. Didn't miss the pasta. Did I just say that??
12/06/2018
Excellent. I cut the zucchini slices thin and then doubled them in a pattern. I did not need to pre-bake the zucchini slices. I doubled the meat using half ground beef and half turkey sausage. Information technology was very practiced! The merely thing different I would do is halve the red pepper flakes, just information technology was fine. I will be making once more for certain!
04/24/2013
Wow! This was absolutely delicious! I substituted butternut squash for the zucchini just to endeavour it and it was great. I also used a jar of Mezzetta Arrabiata sauce instead of making the sauce. I kept the residuum of the recipe the same and I hope you try information technology. Just wonderful!
01/03/2021
I used merely the hot sausage instead of doing half
08/24/2017
This was succulent, and approved past our children as well. The merely change I made was the addition of fresh mushrooms and stale vs. fresh spices, since I just had them on hand.
06/25/2015
Holy... wow. I loved this. Yes, it's time consuming (but making food this good at home is usually worth information technology to me) I mistakenly cut the zucchini widthwise instead of lengthwise using a mandolin musical instrument. It simply took a bit longer to do the layers. I did not roast the zucchini, and I'm okay with it beingness a piffling watery. It wasn't gorgeous, only wow. So skillful. I couldn't find bulk Italian sausage (all they have are links where I am? ) and then I substituted basis lamb for the sausage and added a pocket-size corporeality of fenugreek with information technology. It was excellent. I might try some of the other iterations of this recipe next - love the idea nigh sour cream and spinach!
08/09/2013
This is very good! We love it. I will make this using eggplant instead of zucchini sometimes too. Thanks for a wonderful recipe. :)
02/17/2016
Delicious recipe! No changes needed! I do, still, add mushrooms when i add the tomato paste and diced tomatoes.
03/24/2019
I made it. I didn't have ricotta. So I used a brick of foam cheese. I will follow the recipe side by side time. The family ate all . No complaints. I was surprised how firm it was. Good Keto recipe
11/05/2018
I found this recipe when I was looking for a lasagna I could serve a diabetic. I doubled upwardly on the meats for a petty meatier sauce and my married man loves it. Now when I practice arrive, I brand extra ones, and freeze them, to use up all the extra zucchini and ever have a premade meal on hand.
09/16/2019
This recipe is great! This is a good fashion to utilise upwardly those extra large zucchini that hide in the garden. I didn't have sausage and then simply used a whole lb of hamburger. The hardest part was slicing the zucchini lengthwise. Next time I'll just slice normally and layer them that way. I think I like this better than regular lasagna!
10/02/2016
I added yellow squash as well.
08/19/2019
Followed the recipe and it came out great!!
08/27/2019
We used crumbled pork sausage instead of beefiness and added a few more veggies, but all-in-all information technology was delicious. My 3 & 5 year old kids ate the whole thing (and and then nosotros told them it was zucchini and not noodles). Great dish, volition definitely make over again. Especially if my garden creates those massive zucchini once again. Thanks for sharing.
08/19/2016
Loved it! Very flavorful and one repast you lot desire seconds of. Will try it with basis turkey every bit well as egg found next time. Great flavor with garden fresh zucchini. Volition definitely be sharing this recipe with others.
01/07/2018
Great recipe- modified a few things. I used a full 1 lb packet of mild basis sausage, no beef.i did bake the zucchini starting time with salt, which actually helped keep them crisp. I also added Asiago cheese into the ricotta mix. I loved information technology!
09/fifteen/2015
Why does the photograph (not the recipe) have black olives? EW! Yes---plan on having enough of ZUCCHINI! Yes--- it took me about four hours to make this. YES---- Its adept! I did ADD A SPRIG OF ROSEMARY & threw in a BAY LEAF while the love apple sauce was brewing. Adjacent time I brand this I will practise 3 LAYERS of zucchini/ricotta mix/ tom sauce instead of only two.
01/24/2016
My sister made this with Morn Star spicy blackness edible bean crumbles. Astonishing!!
06/23/2019
This turned out fabled!! I did prebake the sliced zucchini at 350 for ten minutes and added fresh spinach on superlative of the sauce and it turned out groovy. I also used the big zucchini that go lost in the garden which made for skilful size 'noodles' and good flavor. Would make once more.
07/xv/2013
I roasted the squash first and so used information technology instead of noodles. Pretty good, but not significantly healthier.
01/01/2022
I made it merely I used what I had on manus and made some substitutions: vegan cheese for some of the parmesan; a shaved blend of packaged asiago/parmesan/romano for some of the parmesan; augmented the tomatoes with tomato plant sauce (I didn't have enough diced tomatoes) but left everything else the aforementioned. Oh--I forgot to put in the spinach instead of the parsley and left both out completely. Still, the gustatory modality was very good and information technology fabricated plenty for me to save one-half and freeze. Also, I had four zucchini, each well-nigh 9 inches long and ii inches in bore. I sliced all of them on my mandolin to almost 1/eight inches (plus a fleck) and didn't use them all in the lasagna. So, I fried the rest up with butter and vegetable flavoring and ate it split up. Information technology was all adept! My married man even said: "You can't even tell it's not real noodles." LOL.
10/14/2018
This was excellent. I used a 28 ounce tin can of crushed tomatoes instead of 14. Loved the flavor of the sauce. Eggplant slices replaced the zuchinni. Added actress veggies into the layers baby portabellas, fresh spinach and sliced yellow squash. This recipe was a pleasent surprise! Will definitely make once more.
07/15/2016
I used only half of the red pepper flakes, common salt & pepper. Information technology was spicy enough to gustatory modality just not enough to brand my hubby put it down. It was yummy in my volume. Loved information technology.
07/29/2013
Im Not A Fan Of Zucchini & Beef, But It Turned Out Fine.
06/09/2019
I did use 1 lb of both ground beef and hot ground sausage. Every bit per other suggestions, ended up using my nutrient processor to slice 5-6 medium zucchini and added a can of stewed tomatoes. My family loved this recipe. They did not even miss the noodles. So skillful!
08/19/2018
I excluded sugar and made my ain fresh lycopersicon esculentum sauce.excellent flavor!
